Indian Monsooned Malabar

* Coffee cherries are harvested and laid out on patios to sun dry. Once the beans have cured, they are sorted and stored in a temperature controlled warehouse until the beginning of monsoon season. The beans are then exposed to moisture-laden monsoon winds in well-ventilated warehouses. This process takes between 12 to 16 weeks on average. The beans are carefully handled, being raked and turned in regular intervals. This process causes the beans to absorb moisture, which makes the beans expand, and take on a pale gold color. The finished product has very little acidity and an almost neutral pH balance.
